The harvest of the olives in Uruguay is done between the months of March and April, at the beginning of Fall in the southern hemisphere. One of the demands of Los Ranchos olive oil is the preservation of quality at all cost. To this end, the olives are handpicked by teams of harvesters who take turns on the famous red ladders. Stocked in open cases that allow the air to circulate, the olives are immediately taken to the mill, then selected once more by hand before being pressed within a few hours. The speed of this process is essential for the quality of the oil. |
